Galette de Rois

I read a recipe for Galette de Rois today. It's a cake that is enjoyed on 'the twelfth night' of the new year. A bean, small figurine or coin is hidden in the many layers of the pastry and whoever gets the prize is the King/Queen and consequently gets to choose their King/Queen accordingly. The event is celebrated all over France.
The recipe calls for one 'basic pastry' dough. The dough is divided in two, rolled out into two large circles and almond paste is smothered thickly between the two layers. The surprise is that these two layers of this 'one basic pastry' turn into millions of layers...sweet, buttery, smooth, almond infused layer after layer.  The simple 'cake for a king' evolves into a complex treat, so special it is only enjoyed once a year.

Fascinating, eh?
