I think enjoy making pie more than eating pie. This was a fun pie to make. It's a challenge because the butter in the pastry has to stay as cold as possible. If it warms up, the resulting pastry is tough and crunchy, not flaky and delicious. At one point in the baking process I put the unbaked crust outside on the steps to keep the butter cold. (It was a blizzard outside.) When I brought it back inside a few inches of snow had piled up on the towel that was covering the crust. I think the snow was key because the resulting pie was beautiful. There were even layers, many layers of golden, buttery pastry.
